Easy almond granola bars laid in two rows - 1

Hey everyone!! Chelsea back from Chelsea’s Messy Apron.

Who is ready for one heck of a snack bar?! My family goes crazy over almond granola bars, but they aren’t always the cheapest treat to buy – the good ones at least. Especially when the whole box is gone in about one hour.

So I’ve started making my own and I like them even better! Plus you can completely control what ingredients go into yours and make small changes based on what you do or don’t like.

We are crazy about almonds, but if you like peanuts or cashews better, then either one works in this recipe!

Ingredients1x2x3x

  • ▢ 1 ½ cups quick cooking oats
  • ▢ 1 ½ cups roasted unsalted almonds
  • ▢ ⅓ cup rice krispie cereal
  • ▢ ⅓ cup oat flour
  • ▢ ½ teaspoon salt
  • ▢ ½ teaspoon cinnamon, optional
  • ▢ 1 cup creamy almond butter
  • ▢ ½ cup honey
  • ▢ 2 teaspoons vanilla extract

Instructions

  • Line an 8x8-inch baking dish with parchment paper.
  • In a large bowl, combine the 1 ½ cups quick cooking oats , 1 ½ cups roasted unsalted almonds (coarsely chop these if desired), ⅓ cup rice krispie cereal , ⅓ cup oat flour , and ½ teaspoon salt . Add ½ teaspoon cinnamon, if desired.
  • In another bowl, mix the 1 cup creamy almond butter , ½ cup honey , and 2 teaspoons vanilla extract .
  • Mix the oat mixture and honey mixture together until they are well combined. If the mixture seems too wet, add in a few more oats as needed for firmer bars.
  • Press the mixture into the prepared pan and pack it down well. Packing the mixture well is what will hold the bars together.
  • Cover and place in the fridge overnight.
  • Remove from the pan and slice with a very sharp knife. Keep the bars wrapped individually in the fridge.
