I am starting to learn what it is like to be the “soccer mom”. Running errands all day and then running kids everywhere and basically living out of your car. If I would just give into getting a mini van and putting the stick figure family on the back of my car I would be set. 😉

Most of our days are on the go as soon as school gets out. But I absolutely hate getting fast food and really made it a goal to have a meal for them each night. No matter how busy our days are. So that is why I love quick and easy meals. And our family has been loving strombolis lately. This BBQ Chicken Stromboli became an instant favorite.

We’re big fans of BBQ chicken at our house, tender chicken smothered in sweet and tangy BBQ sauce is always a win. So turning that into a stromboli? Total no-brainer.

This recipe comes together fast thanks to a few smart shortcuts like premade pizza dough and store-bought rotisserie chicken. It’s low effort, high reward.

  • ▢ 1 tablespoon unsalted butter
  • ▢ 1 cup thinly sliced red onion, about 1 small red onion
  • ▢ 1 (13.8-ounce) tube thin crust refrigerated pizza dough
  • ▢ 6 slices provolone cheese
  • ▢ 2 cups shredded chicken, I used a rotisserie chicken
  • ▢ ½ cup barbecue sauce,
  • ▢ 1 beaten egg
  • ▢ 1 teaspoon Italian seasoning
  • ▢ 1 teaspoon grated parmesan cheese

Instructions

  • Preheat oven to 375 degrees Fahrenheit.
  • Heat a small skillet over medium-high heat and add 1 tablespoon unsalted butter . Once melted, add 1 cup thinly sliced red onion, and cook until tender, 3-4 minutes. Remove from the heat and set aside.
  • Roll out 1 (13.8-ounce) tube thin crust refrigerated pizza dough on a piece of parchment paper. In the center line up 6 slices provolone cheese in a row. Top with 2 cups shredded chicken, cooked onions, and ½ cup barbecue sauce,
  • Fold the longer sides one at a time over the filling first before folding up the sides. Cut off any excess dough and pinch together the seams to seal it.
  • Flip the whole thing over and brush the outside of the dough with 1 beaten egg . Top with 1 teaspoon Italian seasoning and 1 teaspoon grated parmesan cheese .
  • Bake for 20-25 minutes or until golden brown on top. Serve with more barbecue sauce on the side for dipping.
