It creates the most incredible spice rub and leaves a black spiced pan seared crust on the chicken. It is bursting with so much flavor in each and every bite!
How do you make blackened chicken avocado power bowl?
Chili powder, paprika, onion powder, garlic powder, italian seasoning, salt and pepper all come together in this perfect spice rub. Oil each side of the chicken breasts and rub with the spice rub. Add a tablespoon of olive oil to a medium sized skillet and cook the chicken breasts on medium high heat and cook on each side until cooked throughout.

Blackening is a cooking technique and while it may appear burnt, the dark colored and deeply flavored crust is a result of the charred spices.

Instructions
To prepare the blackened chicken
- In a small bowl add 1 tablespoon McCormick Chili Powder , 2 teaspoons McCormick paprika , 1 teaspoon McCormick onion powder , 1 teaspoon McCormick cumin , ½ teaspoon McCormick garlic powder , 1 teaspoon McCormick Italian Seasoning , 1 teaspoon salt and ¼ teaspoon pepper . Rub the spice rub evenly on the front and back of 2 pounds boneless skinless chicken breasts .
- In a medium-sized skillet over medium-high heat add 2 tablespoons olive oil . Add the chicken and cook on each side about 2-3 minutes or until cooked through to 165 degrees Fahrenheit.
To prepare the power bowls
- Preheat oven to 425 degrees Fahrenheit. On a baking sheet add 2 cups broccoli florets , 1 sliced red bell pepper , 1 sliced yellow bell pepper and 1 (15-ounce) can chickpeas . Salt and pepper and drizzle with 2 tablespoons olive oil . Roast for 15 minutes or until tender.
- To assemble divide the chicken evenly with the broccoli, peppers, chickpeas, 1 cup chopped red cabbage , and 1 chopped avocado .
