  1. Cook : Heat the olive oil in a large pot over medium high heat, then add the onion, carrots, and celery. Cook the vegetables until slightly tender, about 5 minutes.
  2. Cook Cabbage : Then, add the cabbage, garlic, ginger, turmeric, and salt and pepper to taste. Continue cooking, stirring frequently, until the cabbage has wilted.
  3. Simmer : Pour in the diced tomatoes and vegetable broth, then bring the soup to a boil. Reduce the heat to low, and simmer for 15-20 minutes until the vegetables are soft. Serve fresh with additional salt and pepper to taste.
