What’s in Fruit Leather?

  • Switch Up the Flavors: You can use whatever fruit you like. Raspberries, blueberries, peaches, pears or my favorite, apricot! Or get creative and combine fruits, like berries or mango and pineapple, for fun, custom blends. Just aim for about 4 cups of fruit total.
  • Frozen Fruit: You can use frozen fruit, just thaw and strain before blending.

How to Make 3-Ingredient Fruit Leather

Making homemade fruit roll-ups at home is easier than you think! If you love easy, fruity snacks, be sure to check out my Strawberry Freezer Jam too. With just a few basic ingredients and a little patience, you’ll have a naturally sweet treat that beats any store-bought version.

  1. Blend the Fruit: Preheat your oven to its lowest temperature (130–190°F). Line a baking sheet with a Silpat (silicone mat) and set it aside. Add the strawberries, lemon juice, and sugar to a blender and blend until smooth. Pour the mixture onto the Silpat and spread it evenly to a thickness of ⅛–¼ inch.
  2. Bake, Cut and Serve: Bake for 6-8 hours, or until the leather is no longer tacky (It can take up to 12 hou rs). If it cracks or becomes brittle, it’s overdone. Let it cool completely, then cut into strips or rectangles. If rolling the fruit leather, add a strip of parchment to prevent sticking.

Dehydrator Instructions

Prefer using a dehydrator? Here’s how:

  1. Set the temperature to 135°F.
  2. Line dehydrator trays with parchment paper or a fruit leather sheet.
  3. Spread the puree evenly to a thickness of ⅛ to ¼ inch.
  4. Dehydrate the fruit leather for 4 to 8 hours.
  5. Check for doneness : It is ready when the center is no longer tacky.

Storing Homemade Fruit Leather

  • Room Temperature: Store in a cool, dry place, wrapped in parchment or plastic, then in an airtight container. It lasts 3–4 weeks. Make sure it is not sticky, or it could mold!
  • Fridge: Keep in an airtight container for up to 6 weeks.
  • Freezer: Wrap in plastic, place in a freezer bag, and store for up to 1 year . Let the fruit leather sit at room temperature for 15–20 minutes before eating..

  • Add 4 cups strawberries , 1 tablespoon lemon juice , and 3 tablespoons granulated sugar to a blender and blend on high speed until it is a completely smooth puree. Pour the puree onto the baking sheet and smooth it evenly over the whole baking sheet. It should end up being between ⅛-¼ inch thick.
  • Bake for 6-8 hours, or until the leather is no longer tacky. Remove it from the oven and allow it to cool completely before using a pizza cutter or sharp knife to carefully cut it into strips for fruit roll-ups or into rectangles for pieces of fruit leather. If you would like to roll it, cut a strip of parchment paper to roll up with it so it does not stick to itself.
