  • ▢ 4 boneless skinless chicken breasts
  • ▢ salt and pepper to taste
  • ▢ 4 tablespoons unsalted melted butter
  • ▢ ½ cup Italian bread crumbs
  • ▢ ½ cup grated parmesan cheese
  • ▢ ½ teaspoon garlic powder
  • ▢ 2 tablespoons olive oil
  • ▢ 1 medium sliced zucchini sliced
  • ▢ 1 medium sliced yellow squash sliced
  • ▢ ½ pound quartered baby red potatoes

Instructions

  • Preheat the oven to 350 degrees Fahrenheit. Lightly spray a 13 x 9 x 2-inch baking dish with non-stick cooking spray.
  • Season 4 boneless skinless chicken breasts with salt and pepper on both sides and set aside.
  • In a shallow dish add 4 tablespoons unsalted melted butter . In another shallow dish add ½ cup Italian bread crumbs , ½ cup grated parmesan cheese , and ½ teaspoon garlic powder .
  • Dip each chicken piece into the melted butter and then coat in the parmesan garlic crumbs. Lay the coated chicken in the prepared baking dish.
  • In a medium-sized bowl add 1 medium sliced zucchini , 1 medium sliced yellow squash , and ½ pound quartered baby red potatoes . Toss the vegetables in 2 tablespoons olive oil then add the vegetables to the baking dish.
  • Bake for 30-40 minutes until chicken is cooked throughout and vegetables are tender.
