How to Make Grilled Zucchini

Grilled zucchini is a simple side dish that delivers big flavor with minimal effort. It’s fresh, tasty, and incredibly versatile. Plus, it goes so well with any grilled chicken or steak , any night of the week.

  1. Slice: Wash, dry, and slice the zucchini into ½-inch thick pieces.
  2. Combine: In a large bowl, combine the sliced zucchini, olive oil, garlic powder, grated parmesan, salt, and black pepper.
  3. Stir: Gently stir together until the zucchini is coated well in the oil, cheese, and seasonings.
  4. Grill: Preheat the grill or grill pan over medium heat, then clean the grill grates and grease with olive oil. Once the grill is hot, add the zucchini and cook until grill marks are achieved, about 4 to 5 minutes. Flip and cook until the zucchini is tender, about 3 to 4 minutes.   • In the Refrigerator: Once the grilled zucchini has cooled, store it in an airtight container . It will keep in the fridge for 3-4 days!
  • To Reheat: The BEST way to reheat leftover grilled zucchini is in the air fryer! Heat for 3 minutes in the air fryer at 375ºF. You can also reheat leftovers in the microwave for 1-2 minutes.
